Eggplant Parm Casserole- this is my favorite way to do up eggplant- Cube the eggplant, saute in olive oil with some garlic til it’s soft and golden brown. Dump in some marinara sauce and some shredded mozzarella cheese and stir it all together. Put it in a casserole dish, put parmesan on top, and bake at 350 degrees for about a half hour til it’s nice and bubbly.
